Sugar Shack Maple Pancakes

1/4 cup butter
1 cup maple syrup
1/2 - 3/4 cup flour
Pinch of salt

1.  Melt butter in hot maple syrup.
2.  Mix in flour and salt.
3.  Oil skillet and drip batter by spoonfuls,
     turning over after 5 minutes. 


Maple Dip Recipe

1 cup mayonnaise
1/2 cup thick plain yogurt
4 tbsp maple syrup
2 tbsp fresh chopped parsley
3 tbsp fresh chopped chives
2 tbsp fresh chopped basil
3 gloves of garlic, minced
Salt and freshly ground pepper

1.  In bowl combine mayonnaise and yogurt.  
     Add remaining ingredients.
2.  Refrigerate for 30 minutes to allow   
     flavors to mix.
3.  Serve with raw vegetables.


Maple Vinaigrette Recipe

1 tbsp strong mustard
2 tbsp maple syrup
2 tbsp heavy cream
2 tbsp balsamic vinegar
3/4 cup vegetable oil

1.  Wisk together first four ingredients.
2.  Slowly add oil, whicking constantly until
     smooth.
3.  Toss with salad greens.


Pear and Prosciutto Quesadillas

2 flour tortillas
1/2 cup grated cheddar goat cheese
1/2 cup grated mozzarella
2 thin slices prosciuto, coarsely chopped
1/2 Barlett pear, peeled, rubbed with lemon
     juice and thinly sliced

1.  Brown tortillas in quesadilla maker.
2.  Sprinkle cheeses on one tortilla.  Add
     prosciutto and pears.  Place 2nd 
     tortilla on top.  Warm in quesadilla
     maker for 2-3 minutes.
3.  Remove and cut into triangles.</description>
